Rabbi Matis Stebben is a Senior Mashgiach at COR. He graduated from Adaleg IT’s training program and is using his newfound skills to enhance COR’s kosher supervision program. Rabbi Stebben’s training focused on data analytics and machine learning. This can be applied to the field of kosher supervision for example by assisting mashgichim track the volumes of meat used in meat restaurants or cheese used in pizza restaurants. Another successful application would be to track leafy greens to see which types of produce are experiencing insect infestation in particular seasons so owners of establishments and consumers could have this information to make more educated purchasing decisions.
